How to Make Red Mullet with Saffron and Marsala Fennel

Start with the saffron and Marsala fennel. Melt the butter in a pan over a medium heat, then add the thinly sliced fennel, garlic and fresh thyme. Season with salt and black pepper and cook gently until the fennel begins to caramelise and develop a little colour.

Pour in the sweet Marsala wine and allow it to reduce slightly. Add the saffron stock, lower the heat and cook gently for 8–10 minutes, until the fennel is soft and tender but still holds its shape.

For the side salad, combine the Baby Gem leaves, thinly sliced radishes and monk's beard. Dress lightly with Little Olive Oil Kalinjot Pure extra virgin olive oil and lemon juice, then season with salt and black pepper.

Prepare and portion the fresh red mullet and season lightly with salt and black pepper.
