Roasted Garlic Hummus Recipe

Our creamy roasted garlic hummus recipe using Little Olive Oil's extra virgin olive oil (EVOO) is a flavour-packed vegan chickpea dip, perfect for sharing. Blended with roasted garlic, tahini, lemon juice and Little Olive Oil EVOO, this hummus is rich and aromatic. Serve it with warm pita bread, flat bread, or fresh vegetable sticks for an easy appetiser or snack. For dinner parties, you can elevate it with extra toppings like toasted pine nuts, chopped parsley, or a sprinkle of chilli flakes.

How to make the Garlic Hummus Dip

Cut off the top of the garlic bulb to expose the cloves; drizzle with 1 tablespoon of Little Olive Oil EVOO, wrap it in foil, and roast for 35-40 minutes, or until the garlic is soft and caramelised.

Then, let it cool and squeeze the roasted garlic cloves from their skins and add them to a food processor along with the drained chickpeas, tahini, lemon juice, sea salt, cumin (if using), and the remaining 2 tablespoons of Little Olive Oil EVOO.

Blend until smooth, adding 2-3 tablespoons of cold water to reach the desired creamy consistency.

Taste the hummus and adjust seasoning if necessary, adding more salt, lemon juice, or Little Olive Oil EVOO as desired.

Transfer the hummus to a serving bowl, drizzle with extra Little Olive Oil EVOO and sprinkle with paprika, if desired.

This hummus can be made beforehand, and you can store it in an airtight container in the fridge for up to 5 days.

Serve with pita bread, flat bread or vegetable sticks.
