How to make Dark Chocolate Mousse
Place the chopped dark chocolate in a heatproof bowl over a pan of simmering water (double boiler method), ensuring the bowl doesn’t touch the water and stir gently until melted and smooth.
Remove from heat and stir in the Little Olive Oil EVOO until thoroughly combined. In a clean, dry bowl, beat the egg whites and a pinch of sea salt until soft peaks form.
Gradually add half the caster sugar and whisk until the mixture is glossy and forms stiff peaks.
Whisk the egg yolks with the remaining sugar in a separate bowl until pale and slightly thickened.
Gradually fold the egg yolk mixture into the melted chocolate and Little Olive OIl EVOO.
Gently fold a third of the whipped egg whites into the chocolate mixture to lighten it, then carefully fold in the remaining egg whites until fully incorporated and smooth, do this gently to keep the mousse light and airy.
