This berry muffin recipe guarantees soft, moist muffins bursting with fresh berries and Little Olive Oil's Extra Virgin Olive Oil (EVOO). These muffins are ideal for a light dessert, an afternoon snack, or breakfast. They are a delicious fruity treat that showcases the versatility and quality of Little Olive Oil's EVOO in baking. You can also add frozen berries directly to the batter to prevent excess moisture. Introduce some chopped nuts or a sprinkle of oats on top for extra texture or even a pinch of cinnamon for warmth.

How to make Berry Muffins

Preheat your oven to 180°C (160°C fan) or gas mark 4.

Line a 12-cup muffin tin with paper cases or lightly grease it with Little Olive Oil EVOO.

In a large bowl, sift together the plain flour, caster sugar, baking powder, bicarbonate of soda, and salt.

Whisk together the Little Olive Oil EVOO, eggs, whole milk, and vanilla extract in a separate bowl until smooth and well combined.

Add the wet ingredients to the dry mixture and gently fold until combined, don’t overmix; it’s OK if the batter is slightly lumpy.

Carefully fold in the fresh berries and lemon zest (if using).

Divide the batter evenly among the muffin cases, filling each about two-thirds full.

Bake in a preheated oven for 20-25 minutes or until the muffins are golden and a skewer inserted into the centre comes out clean.

Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Store the muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.

The berry muffins can also be frozen for up to 1 month.
